Water Buffalo Tallow
Taste the flavour of 6,000 years of patience.
Water buffalo were carved into the royal seals of Akkadian kings. An animal so valued it was immortalised in stone 4,000 years ago. Not for ferocity or speed, but for something rarer. Reliability. Patience. Steadiness. An animal you could build a village around.
Farmers in the river valleys of the Indian subcontinent chose them as partners. And from there, they helped shape the world.
To the Vietnamese, the buffalo is the beginning of all prosperity. Across Asia, they turned mud into rice paddies, making space to farm and feed empires. In rural China, clay oxen are still whipped at the start of spring to welcome the harvest.
Along ancient Mesopotamian trade routes, they helped bring prosperity westward. In Italy, farmers found their milk richer and sweeter than any cow's, and made from it mozzarella di bufala.
In Buddhist tradition, they symbolise the taming of the restless mind.
Two bloodlines. One shaped the East. One shaped the West.
On a small Tasmanian farm, they've been bred together into one.
A unique and extremely limited harvest. Expect a mild, clean flavour with a subtle richness and buttery depth, smoother than beef, with just a gentle hint of sweetness.
Tallow Benefits: The high fat content of tallow supports the absorption of vitamins A (for eye health), D (for strong bones and teeth), E (antioxidant properties), and K (for heart health).
Water buffalo tallow is naturally lean yet nutrient-dense, with an excellent balance of omega fatty acids.
GROSS WEIGHT: Approx. 560g | NET WEIGHT: Approx. 370g
Why Cook With Tallow?

High-Heat Stable
A smoke point of ~250°C means tallow won't break down or oxidise at the temperatures you actually cook at, unlike most seed oils.

Rich, Natural Flavour
Adds a clean, savoury depth to roasts, fries and sautés that vegetable oils simply can't replicate.

Nutrient Dense
Rich in fat-soluble vitamins A, D, E & K, and one of nature's richest sources of CLA (conjugated linoleic acid).
Grass-fed tallow has been used in kitchens for centuries, long before it was replaced by industrially processed seed oils. With a naturally high smoke point and a fat profile rich in stable, heat-tolerant saturated and monounsaturated fats, it's one of the safest and most flavourful cooking fats available.
What our cooking fats are (and aren't)
Why tallow is not just "animal fat"
Tallow is rendered from suet, the dense, vascular fat surrounding the kidneys and loins. Because it comes from a highly metabolically active region of the animal, it's far more nutrient-dense than generic body fat. It's one of nature's richest sources of CLA (conjugated linoleic acid) and fat-soluble vitamins A, D, E and K.
At room temperature, tallow is firm, white and shelf-stable, making it ideal for high-heat cooking, pastry-making and long-term storage. With a smoke point of around 250°C, it handles everything from deep frying to roasting without breaking down or creating harmful oxidation by-products.
